Crooked Stave Artisan Beer Project was founded in 2010 in the city of Fort Collins, Colorado by Chad Yakobson. Yakobson had written his doctoral thesis while studying in Scotland on the role of brettanomyces yeast in beer brewing, and had published his research as an open source resource which became widespread. He then went to work at Odell Brewing before starting up the brewery.
In 2010, he began brewing the Crooked Stave beer at Funkwerks in Fort Collins. In 2011, it moved into a business park in Denver and began brewing there. A taproom was added in 2013, followed by another taproom in their original home of Fort Collins in 2019.
Crooked Stave’s liberal use of Brettanomyces yeast is unusual for a brewery. In the wine world, the yeast is seen as a spoiling agent, and is only sporadically used in brewing. Though the brewery has added more traditional styles to its reportoire since launching, Crooked Stave is still marked by its dedication to sour, wild, and funky styles of beer.
